Sray skillet with PAM. -you may also coat the skillet in canola oil and then stir rice so that all rice is coated)
Brown rice (NOT INSTANT) 2 cups ( or desired amount-) in skillet of medium/medium high heat (MAKE SURE ALL RICE IS COATED)
Remove rice from skillet.
Add browned rice, RO*TEL (I like the milder flavor or the kind with cilantro adds some kick), 4 cups of water, and sea salt (optional) to a large saucepan and stir.
Bring rice mixture to a boil.
Reduce heat to low (simmer) and simmer for 20 minutes.
RO*TEL RICE!!!!
The rice comes out nice and fluffy, like a restaurant!
If you like your rice with a different consistency/texture, adjust your water amount accordingly.
Remember that the ratio is 2-1 (2 cups of water to 1 cup of rice).
