This is a MODIFIED version of a recipe that I got from the zone perfect message board back in 2002.
This is one of my all time favorite comforting, savory and delicious creations ever concocted! It may sound gross, but it's so good!
Ingredients 1/2 cup plain, non-fat yogurt (Yoplait, Dannon, or Fage brands) 2 oz cooked, cubed/shredded skinless chicken breast -this can be plain grilled, but I use a mixture of seasoning including cumin, chili powder, paprika, McCormick Mesquite Seasoning, and some other spices. 1 oz fat-free cheddar cheese (or your favorite) 1/2 diced tomato 1/4 cup canned, fat-free refried beans or regular, plain black beans (drained and rinsed) 2TBSP or up to 1/4 cup salsa (to your taste) 3 TBSP guacamole or avocado (or less as desired) 1/4 cup cooked rice (optional, you will need a thinner soup to accommodate the extra rice, though) 6 sliced jalapenos (optional)
Season to taste with garlic salt/powder, cumin, chili powder, sea salt, and pepper as desired.
Instructions In a microwave-safe bowl, combine yogurt, salsa, tomato, beans, spices, cheese, and jalapenos and rice if desired, until smooth.
Add chicken and stir.
Microwave for 60 seconds at a time, stirring after each minute. Repeat until you reach desired temperature.
Garnish with guacamole/avocado as desired.
