Turkey Meatloaf
Ingredients:
16 oz 99% lean ground turkey breast
4 egg whites
1 cup whole, rolled oats (not instant)
8 oz salsa (use less if desired)
1 tsp finely ground sea salt
Fresh, ground black pepper to taste
½ cup chopped onions
½ cup chopped green or red bell peppers
½ cup chopped mushrooms (if desired)
1/2 cup chopped celery (if desired)
½ tsp cumin (if desired)
½-1 TBSP dried, crushed red peppers (if desired)
1 TBSP chili powder (if desired)
Variations of Seasonings:
Dried minced onions
Mrs. Dash Seasonings (your favorite)
½ cup Fat-Free Cheddar Cheese (or your favorite low-fat/fat-free cheese)
½ cup BBQ sauce to replace the salsa
Additional veggies
½ cup no sodium, sugar-free ketchup spread over meatloaf before cooking
Directions:
1. Preheat oven to 350*.
2. Combine egg whites, oats, salsa, veggies, and seasonings.
3. Add ground turkey. You can use your hands, a potato masher, or a fork to mix the ingredients.
4. Spray pan (You can use a bundt pan or a loaf pan instead of forming the mixture into a traditional free standing loaf).
5. Using a large spoon, add mixture to pan.
6. Spread ketchup on top of turkey mixture and spread evenly with a spoon.
7. Bake at 350* for 30-40 minutes or until desired doneness. (more or less time depending upon whether you made more than one batch of the recipe. The more you make, the longer the loaves will take to bake since it is thicker.
I usually double, triple, or quadruple the recipe to make ahead during the week.
