INGREDIENTS 1 pound 99% lean ground turkey 8 cups water 8 cubes lower sodium chicken/vegetable/beef bouillon cube OR you can use equivalent amount of low sodium chicken/vegetable/beef stock (OPTIONAL) 4 potatoes, peeled and cubed 2 carrots, sliced 1 small head cabbage, shredded (OPTIONAL) 1 cup pearl barley Other optional vegetables including celery, green beans, zucchini, tomatoes, or kidney beans or other beans, etc would be excellent additions for those wanting a filling meal without all the carbohydrates
DIRECTIONS In a large pot, combine water, bouillon, potatoes (optional), carrots, and cabbage, and (celery, green beans, zucchini, tomatoes, and beans, etc if desired). Bring to a boil. Lower temperature, and simmer. In a separate saucepan, brown the turkey. Put in pot with other ingredients. Slowly simmer for 1 hour. Add barley (optional) for last 15 minutes of cooking time. Serve.
*note-you could probably add some other seasonings to fit your taste bud desires, such as Mrs. Dash, or some hot sauce or Tabasco sauce.
