INGREDIENTS:
1 cup whole wheat flour 1 cup cornmeal 1/3 cup Splenda ¼ cup vanilla protein powder (I use CytoSport Complete Whey-Vanilla) 1 TBSP baking powder 1 tsp ground cinnamon 3 egg whites 2 small ripe mashed bananas ½ cup unsweetened applesauce 1/3 cup chopped walnuts or other nut 1/3 cup nestle swirls or semi-sweet or milk chocolate chips
INSTRUCTIONS:
1. Preheat oven to 350* 2. Spray muffin tin with cooking spray (**makes 9 medium sized muffins (regular tins) or 12 small mini muffins**) 3. In a large bowl, mix flour, cornmeal, baking powder, protein powder, and cinnamon. 4. In a separate bowl, combine egg whites, bananas, applesauce, walnuts, chocolate chips. 5. Combine all ingredients together gently. 6. Divide batter evenly between muffin tins (I use a mini metal ice cream or melon ball scooper). 7. Bake in 350* oven for approximately 18 minutes. I would set the timer for 14 minutes and adjust accordingly. If you cook too long, they will be tough.
