Fresh Homemade Salsa
10 Roma Tomatoes, chopped (you can also use 4-5 cans of drained Ro-Tel canned tomatoes if pressed for time) 1 can green chilis, chopped
1 bunch chopped green onions 1 bunch fresh, chopped cilantro 8-10 cloves of minced garlic (I love garlic, so I use about 10 large sized cloves)
1 TBSP finely ground sea salt (I use Alessi) 1 Tsp garlic salt 1 tsp fresh ground black pepper 1 tsp chili powder
optional: 1 small, fresh chopped jalapeno pepper if desired. a few sprinkles of ground Organic Chipotle Pepper Powder (I use Central Market) a couple sprinkles of Organic Crushed Red Pepper (I use Central Market brand) Directions:
Mix all chopped and minced ingredients together along with spices and stir. Let sit a few hours or overnight to let the flavors meld, if desired.
For a quicker prep, you can rough chop the tomatoes and place all ingredients in a food processor and pulse until it reaches desired consistency.
This almost fills a 10 cup pyrex bowl. I estimate this recipe makes about 8 cups of prepared salsa, depending upon the number of tomatoes used.
