Karin's Rocking Vegetable Soup
2 small (or 1 large) organic yellow onion 64 oz fat-free, reduced/low sodium vegetable broth (or chicken or a mixture) I use Central Market's Organics 1 large can of organic Canellini Beans (white kidney beans), drained and rinsed 1 can organic red kidney beans, drained and rinsed 1 package frozen spinach (I will not use generic, it's gross!) 1 can chopped/diced tomatoes with onion/garlic 1 small jar of organic roasted red bell peppers packed in water, diced 6-8 red potatoes, quartered (or smaller if you desire) 2-3 carrots, chopped (if desired) 2 stalks of celery, chopped 3-5 large bay leaves
To taste: garlic salt, sea salt,
Chop onion and saute in a large soup pot with non-stick spray or a light drizzle of olive oil
Microwave spinach according to directions, drain, and set aside.
Add vegetable broth, both kinds of kidney beans, spinach, tomatoes, roasted red bell peppers, potatoes, carrots, celery, bay leaves. Season with sea salt and garlic salt if desired.
Bring to a boil, let simmer for about 1 hour.
You can add cooked, grilled chicken breast if desired!
